- 1/4 cup peanut butter
- 2 fresh lime (juiced)
- 3 cups coconut milk
- 1/4 cup soy sauce
- 6 cloves garlic (peeled, crushed)
- 3 Thai chili peppers (seeded, finely chopped)
- 2 Tbsp. fresh cilantro (chopped)
- 2 lb. pork tenderloin (trimmed, cubed)
- 1 small onion (peeled, finely chopped)
- 1 Tbsp. vegetable oil
- 1/4 cup soy sauce
- 1 1/2 cups coconut milk
- 1/4 cup cilantro (chopped)

Directions
- Combine peanut butter, 1 lime, 1 1/2 cup coconut milk, 1/4 cup soy sauce, 4 garlic cloves, and 2 chili peppers, 2 tablespoons fresh cilantro, and 2 pounds of cubed pork tenderloin in a medium size bowl, then add pork and let marinate under refrigeration for 4 hours.
- Heat oil in a small saucepan, add the onion, 2 garlic cloves and 1 chili pepper. Sauté for about 4 minutes. Remove from heat. Stir in 1/4 cup soy sauce, 1 1/2 cup coconut milk, juice from one lime and 1/4 cup cilantro.
- Preheat your grill or grill pan.
- Remove the pork from the marinade and thread onto skewers. Grill for 8 minutes or until cooked through to 145 degrees F internal temperature, let rest for 3 minutes.
- Serve with sauce.
