  • 2 tablespoons coconut oil
  • 2 cans full fat coconut milk (13.5 oz each)
  • 3/4 cup chicken stock
  • 1/4 cup basil leaves (chopped, OR 4 small Trader Joe´s basil cubes)
  • 1 1/2 tablespoons fish sauce
  • 2 tablespoons sugar substitute
  • 3 cups vegetables (red bell pepper, zucchini, carrots, peas and broccoli)
  • 1 inch shrimp
  • 1 pinch salt
  • cilantro (for garnish, optional)
  • 1 lime (and more limes for garnish, optional)

    Directions

    1. Heat coconut oil in a saucepan. Add curry paste and basil and stir briefly for 1 minute, be careful as the curry paste will jump.
    2. Pour in the coconut milk, chicken or beef stock, fish sauce, and Swerve. Stir in the chicken/shrimp and vegetables in the mixture to poach; add a pinch of salt. Stir together and simmer over low heat for 10 to 15 minutes. Squeeze in the lime juice and shower with basil and cilantro; serve in dinner bowls with lime wedges.
