Description

For those who love spice, this Thai Green Chicken Curry recipe is for you. This recipe requires just one pan for its preparation. Using a green curry paste as its basis, the curry sauce also features coconut milk and fish sauce for a savory curry with sweet undertones. Use chicken breasts and cut the chicken breasts into large cubes or strips before adding to the pan for a quicker cooking time. Garnish with cilantro and lime wedges and serve with rice.

Ingredients

  • chicken breasts (1/2 kl.)
  • 1 can coconut milk
  • 3 tablespoons green curry paste
  • 2 tablespoons fish sauce (alternatively fish stock cube)
  • 1 teaspoon brown sugar
  • cilantro leaves (to garnish)
  • 1 lime (in quarters)
  • vegetable oil

Directions

  1. Heat a drizzle of oil in a wok or deep frying pan.
  2. Toss the curry paste for 2 minutes to let the flavors out.
  3. Add the chicken and stir well to absorb the spices.
  4. Add the coconut milk and bring to the boil on medium heat.
  5. Reduce the heat and cook gently for 15 minutes.
  6. Add the fish sauce (or stock cube) and sugar, and cook for a further 5 minutes.
  7. Place the lime quarters on the curry and garnish with coriander.
  8. Serve with boiled jasmine rice.
