  • 2 tablespoons extra virgin coconut oil
  • 6 garlic cloves (minced)
  • 3 onions (med-large, chopped)
  • 1/2 cup yellow curry paste (*, less with more curry powder if you have heat tolerance issues)
  • 1 teaspoon mild curry powder
  • 3 bunches mushrooms (beech, chopped)
  • 2 pounds ground beef
  • 2 zucchini (medium, seeds scraped out and cut into half-moons)
  • 2 bell peppers (sweet, seeded and thinly sliced)
  • 6 cups beef stock (good, preferably homemade, definitely low sodium)
  • 19 ounces coconut milk (canned thick, Mae Ploy* is recommended and comes in that size)
  • 4 tablespoons fish sauce (* to taste)
  • 1/4 cup brown sugar
  • 1 cup thai basil leaves (packed)
  • 18 ounces soba (chūka, *, ramen noodles--if you have to, just buy the instant noodles and discard the seasoning, cooked according to package directions in salted boiling water)
