Description
Thai Cucumber Salad- Spicy ingredients give the simple side dish the right kick.
Ingredients
US|METRIC
- 1 tablespoon soy sauce
- 4 tablespoons rice vinegar
- 2 teaspoons Thai fish sauce
- 2 teaspoons sesame oil
- 2 tablespoons sugar
- 1 red chile pepper
- 2 cucumbers
- salt
- 1/2 bunch thai basil
- 3 sprigs mint
- 2 ounces roasted peanuts
Directions
- Mix together soy sauce, rice vinegar, fish sauce, sesame oil and sugar in a bowl.
- Halve chile pepper lengthwise, remove seed, rinse and pat dry. Finely chop chile and add to soy sauce mixture.
- Rinse cucumber, wipe dry, halve lengthwise and scrape out the seeds.
- Cut cucumbers into thin half moons, then place in a sieve, sprinkle with salt and let drain for 10 minutes.
