I made this many times I can count! My sisters keep asking me to make it again and again! I added a bunch of Shanghai bok choy and tons of Enoki mushrooms to this recipe and always doubled the recipe because it disappears too quickly. I like adding an entire roasted chicken to it and boil ramen noodles by the bowl (throw away the flavour packets and only buy the good Asian noodles), so they do not get soggy.

Really flavorful! I tried to do it in the crock pot so a bit of a different consistency but still good with a little naan on the side.

This was soooo easy to make. Just throw ingredients into a pot and boom. I used left over baked chicken and a little bit of the drippings from the night before. If at all possible use a fresh piece of ginger. I think that’s what made the difference. So fragrant and authentic tasting.

Tried it. It was unique - in a good way. I am not used to the taste of coconut soup, but I am sure this will be one of my regular soups that I will prepare when I will get hungry in the future.
A definite 5 stars.

Turn out great. I added bell peppers too, but thinking about other ingredients to make this soup more interesting and satisfying.

Not super filling. Next time I will double the recipe, make my broth from scratch and use shrimp. Boiling the chicken did not turn out well for me. But the cilantro is a must! It goes perfectly with the broth.

It was ok for a quick fix but not like Thai soup I had at Thai places. Too simple for real thing.

Very good. So easy and filling. I made this about 2 was ago and making it again tonight. I may add shiitake mushrooms and lemongrass the next time I make it.

Delicious and so easy! Will definitely be adding this into the dinner rotation. Needed a little salt and it's most flavorful with the cilantro and green onions on top. It wasn't as creamy as I hoped or expected but both my husband and I loved it.

It is a soft comforting soup, mine didn't turn our creamy as I expected, although it might be because I used skim coconut milk

It’s a very quick and easy soup to make. It’s absolutely refreshing and delicious. The blend of these simple flavors create a perfect balance of savory with a hint of spice to pop. Loved this!

I think using chicken broth along with adding chicken to it makes it taste more like chicken soup with a hint of coconut. Next time I think I’ll add more coconut milk and ginger and see if that help. Would love to have had some Siracha or chili oil at home to drizzle on top. Next time!

A bit too lemony for my taste but next time I make ill use 1/2 lemon and I think it’ll be perfect!

Turned out delicious! I made it according to the directions and it was good, but needed something, so I added about 2 tablespoons of light brown sugar and about a cup of baby spinach. The brown sugar made it amazing!

The flavor are there. It actually tasted delicious, however there wasn't enough in the soup. It needed veggies.
