Made a quick version with whatever I had... Used rice vine vinegar instead of fish sauce as I didn't have any fish sauce. Came out really good.

This was delicious. I cooked for 6 people. I used 2 cans of coconut milk (not lite), and 6-7 tablespoons of the red curry, since we like the food a bit spicier. Instead of shrimp, used cod (8 pieces) and it was very very tasty. Also added green beans for some extra texture. Stewed the cod and green beans in the curry broth and the fish was moist and delicious. I will be making this dish VERY often!!!

Very good.. I doubled the sauce and added red peppers. Served over rice noodles and I had it on quinoa. Next time I will add a little more red curry paste as we all like spicy. Would make again. Simple and pretty quick to make

My store was sold out of the Red Curry Paste, but had Green Curry Paste. Other than that I made it verbatim and it tasted pretty good, but it was mild because of the Green instead of Red. I'll make it again with Red next time. I served it over stucky Jasmine Rice ☺

Delicious recipe as is. We did add red bell pepper for a little bit more texture and it turned out great. Such a simple recipe but tastes like you spent hours in the kitchen.

This was very good. I added more curry paste, because I like it with a kick and I also added spinach after I added the coconut milk in order to add a veggie element to the dish. Everything turned out amazing and this will definitely be on regular rotation in my house! :)

AWESOME AWESOME AWESOME!!! I actually can't believe with so few ingredients that this turned out so good!! This may be my new favorite dish I have made on this site. I would suggest just using the full can of coconut milk. I'm going to try that next time because I wanted more sauce. I'll probably add an extra couple teaspoons of curry too to offset the extra milk.

Very tasty, quick recipe! Loved the flavor, and it's great over rice. Would consider thickening the sauce slightly, but overall a winner! Will definitely be making again soon!
