We really enjoyed this fragrant and colourful dinner with Vermicelli rice noodle! The only customizing I did was adding: 1 thinly sliced sweet red pepper, a thinly sliced carrot, 1c diced rutubaga, 1c more chicken stock, 1/2c coconut milk, 2T turmeric. If you have this with a noodle or rice, you will like the extra liquid generated. Plus I cooked the veg up to 75% first, set it aside in a bowl, then did the chicken, then combined it all at the end with the basil for a minute or two to reheat. I would never have done this tonight if it weren't for this recipe! Thanks!!

I am a slow and terrible cook and this is the best quick meal I have ever made. Unlike many other recipes, this recipe doesn't lie when it says it takes 10 minutes to make (15/20 minutes for me). Longest part is chopping the garlic and shallots.

A super quick meal and very tasty! My grocery store didnt have Thai basil or peppers, so I had to tweak a bit with red peppers and regular basil. I tossed in some extra veggoes and served over quinoa.

this stuff is super easy and tastes amazing. its addictive. i use fresh jalapeno because i cant get fresh thai chilis. and i use regular fresh basil.. we LOVE it. i have to double the recipe to feed 3 of us.
