  • 1 garlic clove (peeled and minced)
  • 2 tablespoons olive oil
  • 1 tablespoon white vinegar
  • salt
  • ground black pepper

Directions

  1. In a bowl, add the beans, coriander, olives, tomato, onions, jalapeno pepper, garlic, oil, vinegar, and a pinch of salt and ground black pepper. Mix all of the ingredients together in a large bowl.

I am usually afraid of making bean dishes in my house, but sometimes I break down and make it for my guys. This one has interesting flavors that are rich and hearty. It really fills you up and is very inexpensive to make. You must try this one. Also, don’t be afraid to add it to the top of tacos or with some rice for an even more fulfilling meal.
