- 1 pineapple (large)
- 1 tablespoon canola oil
- 1 pound boneless skinless chicken thighs (cut into 1-inch pieces)
- 3/4 cup soy sauce
- 1/4 cup brown sugar (packed)

- 3 tablespoons sesame seeds
- 2 cups cooked white rice (divided)

Very easy and actually quick to make, scooping the pineapple out was probably the toughest part! I also added diced pineapples and pineapple juice, I cut back on the soy sauce and the brown sugar just a tad I thought it was a ridiculous amount! I used chicken breast tenderloins instead of chicken thighs! Substituted white rice for brown, other then that great recipe.

This recipe was super easy, my husband loved it and asks for it once a week. I do recommend 2 or more pounds of chicken because this dish will go fast! I also added 2 tablespoons of the crushed pinealpple insides to the chicken once it was simmering. Such an easy and delicious dish!!!!

Came out perfectly but please please make sure you measure use less soy and brown sugar if you don't like too much sweets and toucan also use this for bone in thighs

Did this for my husband it was definitely a hit. It was a little too salty for my taste.. I would make it again! The pineapple scooping was time consuming.

The presentation was a winner for my 8 year old! The pineapple juice at the bottom of the bowl meshed well with the other flavors. My sauce never thickened but overall it was pretty good.
