I made a pork loin using a similar cooking method to this just recently. Both the pork and this eye of round were PERFECT! The result was a perfect medium-pink color and very tender moist meat. Only seasoning was salt and pepper. The garlic insertions infused a very nice taste through out. Excellent recipe.
