Anything fried has to be good. These beignet-like pastries covered in cinnamon and sugar with a hint of lemon are the perfect accompaniment to a warm cup of coffee or tea. The perfect way to treat yourself during the cold months.

Ingredients

  • 2.5 deciliters water
  • 1 pinch salt
  • 1 lemon peel
  • 100 grams margarine
  • 150 grams flour
  • 1 teaspoon baking powder
  • 4 eggs
  • sugar (for sprinkling)
  • cinnamon (for sprinkling)
  • oil (for frying)

Directions

  1. Bring the water, a dash of lemon, lemon peel, and margarine to a boil. Let boil for a few minutes, and then remove the lemon peel.
  2. Add the flour and baking powder all at once, and stir well until it forms a ball that separates itself from the pan. Let cook, stirring for 2 or 3 minutes.
  3. Remove from heat, and move to a bowl to cool down.
  4. When it is almost cold, mix in the eggs, one at a time, whisking very well between each addition. If necessary use an electric mixer.
  5. Heat the oil in a pan, or deep fryer. Place the dough in a pastry bag, and pipe strips of dough into the hot oil. When golden, remove from the pan, and coat in sugar and cinnamon.

Great recipe. Definitely for those times I cheat on my diet, but well worth it. Loved these, very delicious. Wrote the recipe down so I can do it again sometime. Maybe I'll make some for the family soon so they can try them.
