  • orange lentils (or 200g skinned and split yellow)
  • 900 milliliters water
  • 1 inch fresh ginger (peeled and cut into thin strips)
  • 2 cloves garlic (peeled and cut into five large pieces)
  • 3 green chillies (left whole, optional)
  • 3/4 teaspoon haldi (turmeric powder)
  • 1/2 can tomatoes (tinned)
  • salt (to taste)
  • 1 1/2 tablespoons butter oil
  • 1 teaspoon ground cumin
  • coriander powder (½ tsp dhaniya)
  • 1/2 teaspoon Garam Masala

    Directions

    1. 1 Place the lentils, water, ginger, garlic, tumeric and chillies in a pan, bring to a boil, then simmer over a moderate heat for 10 minutes.
    2. 2 Stir in the tomatoes and cook for a further 20 minutes.
    3. 3 Add salt and cook for another 10 minutes or so, until the lentils have started to break down and the curry comes together.
