  • 1 tablespoon olive oil
  • 1 bell pepper (medium, red, yellow, or orange thinly sliced)
  • 1/2 onion (small, thinly sliced)
  • 1/4 cup white wine
  • 1/4 cup low fat chicken broth
  • 1 clove garlic (minced)
  • 1 1/2 teaspoons oregano
  • 1/2 lemon (medium, juiced)
  • 2 cups baby spinach
  • 2 cups chicken breast (cooked, and chopped)
  • 1/2 cup fat free feta cheese (crumbled)
  • 2 tablespoons parsley (minced)
  • whole wheat flour tortillas (4 large)

    Directions

    1. Heat non-stick skillet over medium heat with olive oil. Add bell pepper and cook for 3 – 4 minutes to soften. Add onion and cook another 5 minutes to soften. Add wine, chicken broth, lemon juice, oregano and garlic. Cook 25 minutes until cooked down, and vegetables are very soft.
    2. Add cooked chicken and spinach and cook until spinach just wilts.
    3. Heat tortillas in the microwave for 30 seconds, and then fill with 1/4 chicken mixture, feta cheese and parsley.
