  • 500 grams beef tendons (cubed)
  • 2 white onions
  • 1/2 cup fried garlic
  • 1/2 cup fried shallots

  • 8 noodles (pcs of Taiwanese style wide dried)
  • 1.5 kilograms beef shanks
  • 2 liters stock
  • 1/2 cup soy sauce
  • 1 1/2 tablespoons bean paste
  • 2 teaspoons garlic sauce (chilli)
  • 2 tablespoons Chinese cooking wine
  • 1 tablespoon rock sugar
  • 2 star anise
  • 6 spring onions (white parts only and chopped)
  • 1/2 inch ginger (sliced)
  • 3 garlic cloves (minced)
  • water
