Ingredients

  • 12 ounces spaghetti
  • 1 cup hot water
  • 1 cup creamy peanut butter
  • 2 teaspoons reduced sodium soy sauce
  • 2 teaspoons vinegar (white wine or rice)
  • 2 scallions (finely chopped)
  • 2 cloves garlic (very finely minced)
  • 1 teaspoon sugar
  • 1 tablespoon hot red pepper flakes

Directions

  1. Cook pasta until al dente (chewy).
  2. Drain and set aside.
  3. Keep warm.
  4. Prepare sauce in order given.
  5. Combine sauce and pasta in a heated serving bowl.
  6. Makes 4 servings.
