Ingredients

  • 2 whole pita breads (grain)
  • 160 grams cooked chicken (or roasted, shredded)
  • 40 grams cheese (panela, grated, may substitute a mild cheddar)
  • 50 grams mozzarella cheese (shredded)
  • 8 tomatillos
  • 1 clove garlic
  • 4 sprigs cilantro
  • salt and ground black pepper

Directions

  1. Boil the tomatoes until soft. Puree in the blender along with the garlic, cilantro, salt, and pepper.
  2. Pour the puree into a pan and allow to come to a slight boil. Set aside.
  3. Mix the chicken with the panela cheese.
  4. Separate each pita pocket into two thin slices of bread and place the chicken and cheese mixture onto each side. Place onto a baking dish.
  5. Pour the puree over the pita slices and sprinkle with mozzarella cheese. Broil until the cheese is melted and begins to brown.

This was an incredible dish to make and I really loved how easy and simple it was to make. The combination of flavors were outstanding and I couldn't imagine going back to other recipes that could not have come out as great as this one. I plan on making these a lot in the future and would rate it at 5 stars.
