Ingredients
- 2 whole pita bread (grain)
- 160 grams cooked chicken (or roasted, shredded)
- 40 grams cheese (panela, grated, may substitute a mild cheddar)
- 50 grams mozzarella cheese (shredded)
- 8 tomatillos
- 1 clove garlic
- 4 sprigs cilantro
- salt and ground black pepper
Directions
- 1Boil the tomatoes until soft. Puree in the blender along with the garlic, cilantro, salt, and pepper.
- 2Pour the puree into a pan and allow to come to a slight boil. Set aside.
- 3Mix the chicken with the panela cheese.
- 4Separate each pita pocket into two thin slices of bread and place the chicken and cheese mixture onto each side. Place onto a baking dish.
- 5Pour the puree over the pita slices and sprinkle with mozzarella cheese. Broil until the cheese is melted and begins to brown.
