Description
This pork sirloin roast has a dry rub that makes a sweet, spicy crust. The heat of the rub is up to you. The recipe calls for 1/8 teaspoon cayenne pepper. Add more if you like it hot. Serve with Hot Pepper Succotash.

- Preheat oven to 400 degrees. Line a roasting pan with foil. Trim visible fat from the pork.Mix ground cumin, coriander, cayenne pepper and brown sugar together in a bowl.Roll the pork in the spice mixture, pressing the mixture onto the pork on all sides. Spray the pork on all sides with vegetable oil spray. Place pork on the rack in the roasting pan. Place pan in oven and roast 50 minutes until the internal temperature on a thermometer reaches between 145 degrees F. and 150 degrees F. Remove from the oven and let rest 10 minutes. Slice and serve.
