- 3 Tbsp. sugar
- 3 Tbsp. rice vinegar
- 2 Tbsp. tomato paste
- 1 Tbsp. low sodium soy sauce
- 2 dashes hot sauce (we used Sriracha)
- 1 Tbsp. corn starch
- 3 tsp. vegetable oil (divided)
- 1 1/2 lb. shrimp (medium uncooked, peeled and deveined)
- 1 Tbsp. ginger (freshly grated)
- 2 garlic cloves (medium, minced)
- 1 1/2 cups sliced carrots (thinly)
- 1 cup diced onion
- 1 green bell pepper, sliced (medium, into ¼ inch strips and each strip cut in half, about 1 ¼ cups total)
- 1 cup fresh pineapple (cut into 1 inch cubes, or canned if fresh is not available)
- 8 oz. water chestnuts (drained)
- 1/4 cup roasted peanuts
- cooked white rice (for serving)
