  • 1 tablespoon corn starch
  • 3 teaspoons vegetable oil (divided)
  • 1 1/2 pounds shrimp (medium uncooked, peeled and deveined)
  • 1 tablespoon ginger (freshly grated)
  • 2 garlic cloves (medium, minced)
  • 1 1/2 cups sliced carrots (thinly)
  • 1 cup diced onion
  • 1 green bell pepper, sliced (medium, into ¼ inch strips and each strip cut in half, about 1 ¼ cups total)
  • 1 cup fresh pineapple (cut into 1 inch cubes, or canned if fresh is not available)
  • 8 ounces water chestnuts (drained)
  • 1/4 cup roasted peanuts
