  • 2 cucumbers (small, diced)

  • 2 oranges (peeled and chopped, reserving any juice)
  • 2 vinegar (generous tbsps.)
  • salt and ground black pepper
  • 1 honey (generous tbsp.)
  • 1 mustard (generous tbsp. spicy)
  • 1/2 teaspoon tarragon

    Directions

    1. Heat the oil in a pan and add the chicken. Cook for 3 minutes before adding the onion and cucumber. Stir in the vinegar and any reserved orange juice.
    2. Season with salt, pepper, and honey. Cover and cook on low heat for 10 minutes.
    3. Add the mustard, tarragon, and oranges. Cook for 2 more minutes before removing from heat.
