Ingredients

  • 1 lime juice (only)
  • 1 tablespoon kecap manis (Indonesian soy sauce)
  • 1 tablespoon ketchup
  • 1 tablespoon olive oil
  • 1 carrot (peeled and cut into thin matchsticks)
  • 1 red pepper (cut into thin strips)
  • 1 clove garlic (peeled and crushed)
  • 1 pound ground beef
  • 2 shallots (peeled and thinly sliced)
  • 2 tablespoons mint leaves (+ extra, to garnish)
  • steamed rice (to serve)

Directions

  1. Combine the lime juice, kecap manis and ketchup in a bowl and set aside.
  2. Heat the oil in a wok over a high heat and stir-fry the carrot and pepper for 1 min, until just tender. Remove from the heat and set aside.
  3. Return the wok to the heat on medium. Stir-fry the garlic and ground beef for 5-7 mins, stirring to break up any lumps, until browned.
  4. Return the vegetables with the lime juice mixture, shallots and mint to the wok and toss to combine. Garnish with mint and serve with steamed rice.
