Description

Now you can have tamales for dessert with this scrumptious recipe for Sweet Tamales. Made with the traditional masa flour mixture that is slightly sweetened with sugar, these tamales are filled with raisins, rolled, and then steamed until ready. Color the tamale mixture with food coloring before rolling in the corn husks for a rich color that signals that these sweet tamales are something special. Get creative with the filling and add some cinnamon or chopped nuts.

Ingredients

  • 1 1/4 cups lard
  • 1/4 teaspoon baking powder
  • 1 kilogram dough (tortilla, use masa flour and follow the instructions on the packet)
  • 1 1/3 cups water
  • 1 1/4 cups sugar
  • 1/4 cup raisins
  • red food coloring
  • 18 corn husks

Directions

  1. In a bowl, add the lard and baking powder. Beat until it has the texture of meringue. Set aside.
  2. In a large bowl, knead the tortilla dough and water until smooth.
  3. Add sugar, raisins, and food coloring. Knead again.
  4. Add the lard and knead again.
  5. Open the corn husks and add about 1/3 cup of the masa mixture in each one. Add raisins and close.
  6. Place the tamales in a steamer. Once the water in the steamer starts boiling, continue to cook for 1 hour.
