WOW!!! Super easy and delicious!!! I doubled the recipe and used collard greens from my farm share instead of spinach and added a dollop of vegan sour cream at the end super healthy and my teenager and 21 Year old liked it too!!!

Came out great! I added a 1/2 cup of coconut milk because I like a bit of the creaminess just after it simmering for 20 minutes, great flavors and texture. I also substituted with sprouted chickpeas.

My wife and kids loved this recipe. My youngest daughter hates quinoa but she loved it tonight!! Definitely one of the best meals I have ever eaten.

This recipe was fantastic! I actually made it with couscous instead of quinoa, but the stew was amazing! I think I might add a bit more red pepper, but wow, there is definitely going to be a next time for this recipe!
