  • 3 sweet potatoes (peeled and medium dice)
  • 1 butternut squash (medium sized, peeled and medium dice)
  • 4 cups chicken broth
  • 2 cups water
  • 3 tablespoons olive oil
  • 1 shallot (finely diced)
  • 2 garlic cloves (finely chopped)
  • 2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1 tablespoon sugar
  • pepper (to taste)
  • 2 ounces cream cheese
  • fresh thyme leaves (optional:, for garnish)

Very smooth without being too heavy. I didnt need to re-salt it after the 2nd simmer. I also subbed out 2 of the sweet potatoes for an equal amount of Idaho gold potatoes because thats what i had. It blended really well and I will definitely make it again!
