This is such an effective, tasty and easy way to make sweet potatoes, this recipe has become a must have addition every time my family have roast turkey, the flavour is perfectly balanced and the texture always comes out wonderfully light. For an everyday meal I generally use tinned pineapple as it is so much more convenient and cost effective and use a 9x13 dish. If it is for a special occasion I go all out use fresh pineapple, some cinnamon and some maraschino cherries, I also add the topping suggested by some people on here using 1/2 cup brown sugar, 1/2 cup flour, 1/3 cup melted margarine, 3/4 cup chopped pecans and pineapple rings and use a 9x13 inch dish. This makes a really special dish that tastes extra good, it is guaranteed to impress even the fussiest dinner guests. If I need to be quick I sometimes heat my potatoes in the microwave halved to soften them then scoop them out of the skins before mashing.
