Description
You are no doubt familiar with sweet potato pie and sweet potato biscuits, but how about sweet potato cake? Why not, when you think about how delicious pumpkin cake can be. Sweet potatoes are sweet not just in name, after all, and they pair perfectly with the maple syrup in this recipe. Plus, the potatoes (like pumpkin puree) is a natural at making cakes much more moist, without needing to add a lot of oil.

- To prepare the sweet potato puree, cook the potatoes (cook two medium sized) cubes and then crush with a fork or grind with a magic wand.
- Preheat the oven to 180ºC and grease an English cake pan. Reserve.
- In a bowl place the eggs, maple, water and oil and beat very well until smooth. Add the puree and mix well.
- In another bowl, place the flour, yeast, sugar and cinnamon and add to the mixture of damp, gently wrapping, without beating too much.
- Put the dough in the form and take it to the oven to bake (toothpick test).
