Pizza lovers of every age will fall for this dessert inspired, nectarine and blueberry pizza. Sweet nectarines and ripe blueberries are enhanced by rose water, providing fragrance and a mild sugary taste. Mascarpone cheese adds the perfect amount of savory flavor and creamy texture to hold the fruit on the soft dough. Its beautiful display of colors makes it a work of art that is not only delicious, but low in calories. Go ahead and have pizza for dessert; the kids will love it too!

Ingredients

  • 10 strawberries
  • 110 grams granulated sugar
  • 1 tablespoon rose water
  • 150 grams mascarpone
  • 1 pizza dough
  • 4 nectarines
  • 125 grams blueberries
  • mint leaves

Directions

  1. Preheat oven to 210 degrees Celsius.
  2. Rinse and hull the strawberries. Place them in the bowl of a food processor. Mix them with 100 grams of sugar, rose water, and mascarpone.
  3. Unroll the pizza dough on a baking sheet lined with parchment paper. Prick it with a fork.
  4. Spread the strawberry cream over the dough, leaving a border of 1 centimeter.
  5. Rinse the nectarines and dry them with paper towel.
  6. Cut them in half, remove the pit, and cut into slices. Place the slices over the dough.
  7. Add the blueberries.
  8. Sprinkle with the remaining sugar.
  9. Cook for 20 minutes.
  10. Before serving, add small mint leaves.

This was good, but I opted to skip the pizza crust and use a sugar cookie dough for the crust. It added a little extra sweetness that was nice.
