Although sandwiches are typically on the savory side of the spectrum, sweet ones can be a delicious break from the norm. In this case, cocoa bread that's dotted candied orange peel, chocolate chips and pinenuts is prepared in a bread machine. Meanwhile, a mascarpone filling made with eggs, sugar and Vin Santo is whipped together and chilled so the flavors can meld. After a few hours, the sliced bread gets a generous slather of cream and is topped with another slice to form a decadent hand-held treat.

Ingredients

  • bread (Cocoa)
  • cream (Mascarpone)
  • 250 milliliters low-fat milk
  • 200 grams strong flour
  • 250 grams all purpose flour
  • 80 grams cocoa (sweet, powdered)
  • 1 egg
  • 40 grams butter (melted)
  • 1 teaspoon salt
  • 4 tablespoons sugar
  • 1 packet dry yeast (or 150 gr. of yeast starter)

  • 4 egg yolks (medium)
  • 200 grams sugar
  • 20 milliliters vin santo (may substitute with a sweet dessert wine)

Directions

  1. Place the milk, strong flour, all purpose flour, cocoa, egg, butter, salt, sugar, and yeast in the bread machine bowl. It is also possible to knead the ingredients by hand or with a mixer for approximately 10 minutes and then let rise until the dough doubles in size.
  2. Set the bread machine to the kneading function.
  3. Add the chocolate chips.
  4. When the cocoa bread is done, let it cool completely. Or if not using a bread machine bake the bread for approximately 40 minutes at 190 degrees Celsius and let cool.
  5. Place the egg yolks and the sugar in the mixer bowl and beat for 2 minutes.
  6. Add the mascarpone cheese by the spoonfuls into the bowl, while continuously beating.
  7. Beat for an additional 2 minutes, the mixture should be creamy.
  8. Incorporate the Vin Santo.
  9. Refrigerate for a few hours before serving.
  10. Cut the cocoa bread into 1/2 centimeter thick slices.
  11. Spread the slices with a generous amount of mascarpone cream.
  12. Pair two slices together and slice the sandwich diagonally.
  13. Serve.

I suggest making the sandwiches in a toasted brioche and drizzling chocolate over them. These take awhile to make, but the result is worth it!
