I tried this recipe out on our dinner party guests last night. Everyone ate every bite! I served it as a light refreshing starter to a vegetarian curry meal. I altered the recipe a bit. I did not have avocado oil so used Canola oil instead and used agave nectar instead of honey. I also cut back on the mint. I used less than one cup and felt it was still minty enough for my taste. My guests asked for the recipe, so definitely a winner.
