  • 1 pound red chilies (deseeded)
  • 8 cloves garlic (peeled)
  • 2 cups rice vinegar
  • 2 1/4 cups sugar
  • 1/4 cup fish sauce

Directions

  1. In a food processor, combine chilies and garlic and process until smooth. Combine with 2 cups water, rice vinegar, sugar and fish sauce and simmer for 20-25 mins, stirring occasionally, until thickened and slightly jammy.
