Just the right amount of sweet, this berry cake is made with no butter and all natural yogurt for a low calorie cake that will have you reaching for another slice. Use your favorite berry jam and feel free to add fresh berries to the top for a fruity garnish.

Ingredients

  • 4 eggs
  • 200 grams sugar
  • 1 natural yogurt
  • 100 grams margarine
  • 220 grams flour
  • 1 teaspoon baking powder
  • 2 tablespoons jam (berry)

Directions

  1. Preheat the oven to 180 Celsius degrees.
  2. Grease a bundt cake pan with butter, and sprinkle with flour. Set aside.
  3. In a bowl, whisk eggs and sugar until whitish.
  4. Add the yogurt, margarine, and jam. Whisk well.
  5. Finally, add the flour and baking powder, stirring, without whisking.
  6. Place the dough in pan and bake for 30 to 35 minutes.

Was searching for a good cake recipe the other day. Very happy I came across this one. Fairly simple to make and definitely one of the best cake recipes I have tried/made. I used strawberry jam, and I didn't change anything with the recipe but I did add some strawberries on top. It’s just the right amount of sweet, but not so sweet that you have to fight to get through one piece. It’s definitely a cake that can be enjoyed.
