Ingredients

25 grams fresh yeast
25 ounces cold water
75 cream (fresh)
10 grams salt
10 grams sugar
500 grams white flour
100 grams rye flour

Directions

1In a bowl, add the crumbled yeast, 25 ounces of cold water, cream, salt, and sugar. Mix well and let rest for 1 hour.
2Add the flours, and use an electric mixer to mix for 7 to 8 minutes until a smooth dough.
3Cover the dough with plastic wrap and refrigerate for 50 minutes. The dough will rise.
4On a floured surface, roll out the dough to 3 millimeters thick and spread on a baking sheet lined with parchment paper. Prick the dough with a fork. Cover with plastic wrap and refrigerate for another 10 minutes. The dough should not be too thick, because the biscuits will swell during cooking.
5Cut out shapes with a cookie cutter, prick the dough again, and let stand for about 30 minutes.
6Heat a frying pan without grease, and fry the biscuits for 3 minutes on each side.
7Garnish to taste with smoked salmon, shrimp, or with jam for breakfast.
