These croquettes make a great appetizer for a strolling buffet. I mound them several layers high on a bed of curly leaf lettuce and sprinkle them with finely chopped fresh parsley for visual interest. I set small bowls of tartar sauce, for dipping, all around the platter of croquettes. When my son saw how I present this at public events he asked for the same at home! It was fun to have the family dipping in together! I have served these croquettes warm or at room temperature and they reheat well within a few days of original preparation.
