Surf and Turf Skewers with Potatoes and Spicy Salsa

Ingredients

  • 1 2/3 pounds large potatoes
  • 4 tablespoons olive oil
  • 2/3 pound tomatoes (chopped)
  • 1 clove garlic (peeled and finely chopped)
  • 2 red chilies (deseeded and finely diced)
  • 1/2 bunch cilantro leaves (fresh, removed and finely chopped)
  • 1 tablespoon honey
  • 8 king prawns (peeled and deveined)
  • 4 chicken breasts (about 4 oz each, sliced in 1/2 lengthwise)

Directions

  1. Cook potatoes in boiling salted water for about 20 mins. Drain, rinse under cold water, then cut into 1/3 inch slices. Season with salt and coat in oil.
  2. Meanwhile, make tomato salsa by mixing tomatoes with garlic, chili, cilantro and honey then season. Set aside.
  3. Broil potatoes for about 5 mins, turning. Thread prawns and chicken onto wooden skewers then add to pan with potatoes and broil, turning, for 10 mins. Serve skewers with potatoes and salsa on the side.
