  • 1 1/2 cups flour
  • 3 tablespoons cocoa powder
  • 1 teaspoon soda
  • 1 pinch salt
  • 1 cup sugar
  • 1/4 cup oil
  • 1 cup water
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon white wine vinegar (or lemon juice)
  • 1/2 teaspoon instant coffee

    Directions

    1. Preheat oven to 180 degrees. Cover a baking pan with baking paper, brush with olive or vegetable oil and sprinkle with flour.
    2. Mix flour, cocoa, soda and salt. In a separate bowl, combine sugar, butter, water, vinegar and coffee. Whisk until the sugar is completely dissolved.
    3. Mix both mixtures until smooth.
    4. Pour the batter into the prepared form and bake for 35-40 minutes. Cool completely and slice. On top you can cover the easiest chocolate cream or sprinkle with grated chocolate.

    My husband baked it on my bday, it was the best homemade chocolate cake I had ever tasted. It was super moist, with right amount of cocoa and sugar. Instead of ganache, he topped it up with strawberry whipped cream and that was just the perfect blend.
