  • 30 i can't believe it's not butter! spray made with extra virgin olive oil
  • 1 eggplant (medium, sliced into 1/4-inch-thick rounds)
  • 1/4 cup balsamic vinegar
  • 2 tomatoes
  • 2 tablespoons fresh mozzarella cheese
  • 1/4 cup fresh basil leaves (very thinly sliced)

    Directions

    1. Evenly spray I Can't Believe It's Not Butter!® Spray made with Extra Virgin Olive Oil on both sides of eggplant. Broil, turning frequently, until tender, about 10 minutes; cool.
    2. Alternately layer eggplant and tomatoes on serving platter. Sprinkle with cheese and basil, then drizzle with Wish-Bone Light® Balsamic Basil Vinaigrette Dressing.
