  • 1/3 cup canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar (packed)
  • 1/2 tsp. vanilla extract
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp. cinnamon
  • 1 tsp. baking powder

    Amazing! My alterations were :-went with quite less white sugar because i put a tablespoon of honey (put 50g instead of 100g) -more cinnamon !!! They turned out great, they were spongy and moist even after 2 days sitting on the counter. I think they would work with a handful of almonds in them also :)

    These muffins were so delicious and the consistency was perfect. I love bananas, but unfortunately bananas do not love me. This is a great way for me to still enjoy them. This recipe will be a definite keeper for me - I can’t wait to make them again.
