Description

This sun-dried tomato pesto is super simple to make, all you need is 25 minutes! The tomatoes are blended with arugula, mint, walnuts, vinegar, olive oil, and garlic for a flavor-packed sauce. It is extremely versatile, you can spread it onto a sandwich, mix it into a pasta dish, or use it as the sauce on a pizza, the possibilities are endless. If you mix up a big batch you can portion it out and freeze for easy and quick use.

Ingredients

  • 200 grams tomatoes (dried)
  • 1 tablespoon parmesan cheese (grated)
  • 50 grams arugula
  • 10 grams mint
  • 50 grams walnuts (or pine nuts)
  • 1 tablespoon balsamic vinegar
  • 5 tablespoons water
  • 40 grams olive oil
  • 1 garlic cloves
  • pepper (to taste)
  • salt (to taste)

Directions

  1. 1Place the tomatoes in a small amount of boiling water for a few minutes until rehydrated.
  2. 2Drain the tomatoes and place them in a food processor or blender along with the parmesan cheese, arugula, mint, and walnuts or pine nuts.
  3. 3Grind the mix for approximately 10 seconds on medium to high speed.
  4. 4Add the balsamic vinegar, water, olive oil, and garlic and puree on medium speed for a few seconds.
  5. 5If necessary, add more olive oil until the mixture is creamy and smooth.
  6. 6Store the pesto in a glass jar, drizzling a bit of olive oil over the top to preserve.
