Summer Veggie Fried Cauliflower "Rice"

Ingredients

  • 2 tablespoons olive oil
  • 1 onion (small, minced)
  • 1 cup snow peas (sliced fresh)
  • 1/4 cup grated carrot
  • 1 cup fresh asparagus (sliced)
  • 1 head cauliflower (grated, about 6 cups)
  • 1/4 cup scallion
  • 4 tablespoons chicken broth
  • 2 tablespoons seasoned rice wine vinegar (like Nakano)
  • 2 tablespoons fresh parsley (chopped)
  • yellow pepper (sautéed diced, for garnish)

Directions

  1. In a large skillet over medium heat, cook onion, snow peas, carrot and asparagus in oil for 5 mins or until tender, but still bright green.
  2. Increase the heat to medium high, add cauliflower, scallion and chicken broth. Cook while stirring occasionally, for 6 mins.
  3. Stir in vinegar and parsley. Season to taste with salt and pepper. Can be served warm or cold.
