Summer Fruit Salad with Crunchy Nut Topping

Ingredients

  • 125 grams blueberries
  • 150 grams strawberries (quartered)
  • 3 kiwi fruit (peeled, and cut into chunks)
  • 1/2 cantaloupe melon (peeled and cut into chunks)
  • 2 apples (cut into chunks)
  • 75 milliliters orange juice
  • 50 grams sugar
  • 75 grams pistachio nuts (shelled)
  • 75 grams walnut halves
  • 4 scoops vanilla ice cream

Directions

  1. Place the fruit into a bowl with the orange juice, mix. Meanwhile, heat the sugar in a non-stick frying pan. When the sugar begins to caramelize, add the nuts and stir well to cover with the caramel. Remove the nuts from the pan and place on parchment paper to cool. When cooled, coarsely chop the nuts. To serve, portion the fruit in individual bowls, decorate with the nuts and serve with a scoop of vanilla ice cream.
