Ingredients

  • 1 cup dates (chopped)
  • 1 cup raisins
  • 2 cups pancake flour
  • 4 egg whites
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • 1 cup prunes (chopped)
  • 2 cups water
  • 1/2 cup chopped pecans

Directions

  1. Heat dates, prunes, raisins and water in microwave for 2 minutes (or stove top in 2 quart pan).
  2. Cool.
  3. Blend cinnamon with pancake flour; add pecans.
  4. Fold in egg whites by hand.
  5. Add fruit mixture.
  6. Spoon into greased and floured tube pan (or makes 24 muffins).
  7. Bake at 325 degrees for 30 minutes or until done.
  8. May be frozen.
