Ingredients

  • 2 red bell peppers (thickly sliced)
  • 2 carrots (thickly sliced on a bias)
  • 2 red onions (cut into thick wedges)
  • 8 baby beets (trimmed, quartered)
  • 3 zucchini (thickly sliced on a bias)
  • 5 cloves garlic (peeled)
  • 1/4 cup vegetable oil
  • 1/4 cup brown sugar
  • 1 tablespoon thyme leaves (fresh lemon, + extra, to serve)

Directions

  1. Preheat oven to 400°F. Combine all ingredients. Season then transfer to a large roasting pan. Roast for 40 mins, or until vegetables are tender and caramelized. Serve sprinkled with reserved lemon thyme.
