Description

A light meal for a hot day, these stuffed tomatoes are easily made with the help of a food processor. Coupling tuna and crab with the tang of pickles, a light cold salad fills the tomatoes to the brim.

Ingredients

2 tomatoes (medium)
1 can tuna
3 crab sticks
6 olives
2 tablespoons pickles
3 parsley sprigs
2 tablespoons mayonnaise
salt

Directions

1Thoroughly wash and dry the tomatoes. Cut off the tops of the tomatoes, and clean out the inside of each one, being careful not to break them. Set aside.
2In a food processor, coarsely chop all the remaining ingredients (or to taste).
3Fill the tomatoes with the mixture, and serve with small pieces of toast.
