A light meal for a hot day, these stuffed tomatoes are easily made with the help of a food processor. Coupling tuna and crab with the tang of pickles, a light cold salad fills the tomatoes to the brim.

Ingredients

  • 2 tomatoes (medium)
  • 1 can tuna
  • 3 crab sticks
  • 6 olives
  • 2 tablespoons pickles
  • 3 parsley sprigs
  • 2 tablespoons mayonnaise
  • salt

Directions

  1. Thoroughly wash and dry the tomatoes. Cut off the tops of the tomatoes, and clean out the inside of each one, being careful not to break them. Set aside.
  2. In a food processor, coarsely chop all the remaining ingredients (or to taste).
  3. Fill the tomatoes with the mixture, and serve with small pieces of toast.

Came across this recipe the other night and found it interesting. I had never tried out stuffed tomatoes before. I’m glad I did. I am in love with this dish. The crab and tuna work so well together, I feel like they ought to be coupled in everything I do lol. I wasn't sure how the pickles were going to work in this at first, but I think it complements the dish and sort of pulls it together. Super delicious. I will definitely be doing this again, and probably all the time.
