Treat yourself to a tasty stay in dinner with this recipe for Stuffed Tomatoes. Hollowed out tomatoes provide the perfect edible receptacle for a creamy mixture of mascarpone cheese, lemon, onion, and ground walnuts. We recommend campari tomatoes or another vine-ripened variety for this recipe. Garnish each stuffed tomato with walnut pieces and place the top of the tomato back on. Make this recipe again and again with a different twist by experimenting with the seasonings for the mascarpone filling.

Ingredients

  • 150 grams mascarpone cheese
  • 1 onion (small, finely chopped)
  • 1 lemon
  • 1 handful walnuts (ground, plus another handful for garnish)
  • 10 tomatoes (cocktail)
  • salt
  • ground black pepper

Directions

  1. Mix the mascarpone cheese, onion, lemon juice, lemon zest, and ground walnuts in a small bowl.
  2. Cut a thin slice off the bottom of each tomato, and a slice from the top.
  3. Remove the filling of each tomato using a spoon.
  4. Stuff the tomatoes with the mascarpone cheese mixture, garnish with a walnut, put the top back in place, and serve.

Modified it by using bits of bacon, cream cheese, and no walnuts. I like tomatoes about dollar size.

I used snipped chives, instead of the chopped onions. I liked the little bits of green for color with the red tomatoes. These make pretty little appetizers that everyone grabs off the plate quickly. Don't try to substitute another cheese for the mascarpone. It works so perfectly. These tomatoes can be warmed just a little bit in a low heat oven if you want to try them that way.
