Hollowed out tomatoes provide the perfect edible receptacle for a creamy mixture of mascarpone cheese, lemon, onion, and ground walnuts. We recommend campari tomatoes or another vine-ripened variety for this recipe. Garnish each stuffed tomato with walnut pieces and place the top of the tomato back on. Ingredients

150 grams mascarpone
1 onions (small, finely chopped)
1 lemon
1 handful walnuts (ground, plus another handful for garnish)
10 tomatoes (cocktail)
salt
ground black pepper

Directions

1Mix the mascarpone cheese, onion, lemon juice, lemon zest, and ground walnuts in a small bowl.
2Cut a thin slice off the bottom of each tomato, and a slice from the top.
3Remove the filling of each tomato using a spoon.
4Stuff the tomatoes with the mascarpone cheese mixture, garnish with a walnut, put the top back in place, and serve.
