So good! I ended up doubling the recipe as far as all the ingredients except for the squash to have leftovers. I didn’t have a 2nd 14oz can of diced Tomatoes so I just subbed for marinara sauce

This was a very easy recipe, and it tasted delicious! I added mushrooms, and a little parmigiana on top. My husband, who is very picky, even ate a whole squash bowl full!

cut the squash and bake at 350 for 45 minutes. sauce is thick and filling. add vegan meat crumbles, this became a weekly treat for us

This dish turned out fantastic! I used the oven method to cook the squash and it was the perfect texture. I added cheese for the top and that has made it my favorite substitute for pasta.
