Stuffed Sausages with Garlic Mashed Potatoes

Ingredients

  • 8 beef sausages (thick)
  • 1/4 cup grainy mustard
  • 3 ounces mozzarella cheese (grated)
  • 1 ounce parmesan cheese (grated)
  • 3 tablespoons breadcrumbs
  • 1 tablespoon pitted black olives (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • mashed potatoes (Garlic)
  • 10 potatoes (peeled, cut into chunks)
  • 1/4 cup milk (or heavy cream)
  • 1 tablespoon butter
  • 2 cloves garlic (minced)
  • apple
  • red cabbage

Directions

  1. Heat a large frying pan over high heat. Cook sausages for 10-12 mins, turning frequently, until cooked through. Butterfly each sausage and spread mustard over top. Combine cheese, breadcrumbs, olives and parsley and spread over sausages. Sandwich back together and set aside.
  2. Preheat broiler. Arrange sausages on a foil-lined tray. Broil for 4-5 mins, until sausages are heated through and cheese melts.
  3. For the garlic mashed potatoes, cook potatoes in boiling salted water for 15-20 mins, until tender. Drain and mash with milk, butter and garlic.
  4. Serve sausages with garlic mashed potatoes and sautéed cabbage and apple.
