- 1 lb. ground turkey
- 1 yellow onion (diced)
- 3 cloves garlic (minced)
- 1 1/2 Tbsp. Italian seasoning
- 1/2 tsp. sea salt (plus more to taste)
- ½ teaspoon ground pepper
- 1/4 tsp. canela
- 3 cups fresh baby spinach (roughly chopped)
- 2 green bell peppers (large, diced, any color bell pepper will work)
- 2 cups low sodium vegetable broth
- 15 oz. diced tomatoes (undrained)
- 8 oz. tomato sauce
- 1 Tbsp. tamari sauce (or coconut aminos)
- 1 cup long grain brown rice (uncooked, I used Lundberg Farm long grain brown rice)
- 1 cup shredded cheese (I used cheddar)
- chopped fresh parsley (for serving:, optional)
