  • 6 mushrooms (large)
  • 3 tablespoons extra-virgin olive oil
  • 3 cloves garlic (chopped finely)
  • 2 cups fresh breadcrumbs
  • 1/2 cup fresh flat leaf parsley (chopped)
  • 1 1/2 teaspoons lemon peel
  • 1/4 cup grated parmesan cheese (finely)
  • salt
  • freshly ground black pepper

Directions

  1. Preheat the oven to 350°F. Remove the stems from the mushrooms; coarsely chop stems.
  2. Heat 1/2 the oil in a large skillet on high heat. Add the mushroom stems. Cook, stirring, for 1 min or until softened. Add the garlic, cook, stirring for 1 min or until fragrant. Add remaining oil and breadcrumbs; cook, stirring, for 2 mins. Remove from the heat. Stir in the parsley, lemon peel and Parmesan cheese; season with salt and freshly ground black pepper.
  3. Fill the mushrooms with breadcrumb mixture. Place the mushrooms in a baking dish.
  4. Roast for about 20 mins or until tops are browned and mushrooms are just tender.
