I was really pleased when I came across this recipe as I love stuffed crust pizza and try and avoid buying pre-prepared products, but had never considered making one of my own. I made my own pizza dough using a basic recipe and cut edam cheese into really thin strips as I didn't want to buy string cheese, before laying the cheese around the crust I rolled out the dough and covered it in the pizza sauce (which I had also made myself), I then added the cheese and rolled the crust around it as I think the sauce helps the dough to seal better. I didn't use pepperoni and instead added 5 cheeses (mozzarella, cheddar, edam, parmesan and Monterey Jack) pineapple, chicken breast and sweet corn. This created the ultimate indulgent pizza much better than anything I have bought in a store and far cheaper than the take away. I make pizza sauce by lightly frying and onion and two crushed garlic gloves with black pepper in a little olive oil and butter, I then add tinned tomatoes, brown sugar, basil, and oregano allow it to heat through and add tomato puree to thicken as required. Once it is fully cooked I blend it until it is smooth and add more tomato puree if required.
