  • 6 ounces chicken breasts
  • 1 cup basil
  • 1 cup spinach
  • 1/4 cup red onion (diced)
  • 1/4 cup yellow onion (diced)
  • 1/2 cup green onion (chopped)
  • 1/8 cup roasted garlic (diced)
  • 1/4 cup dried tomatoes (oven, diced)
  • 1/4 cup Parmesan cheese

    Directions

    1. Preheat oven to 325 degrees.
    2. Butterfly the chicken breast by thinly cutting breast in half, but not all the way through, to create a pocket. Butcher can do this for you, if needed.
    3. Dice the onions and oven dried tomatoes. Rough chop the basil and spinach. Dice the roasted garlic in small pieces. In a mixing bowl, add all the ingredients except for the chicken, and mix together.
    4. Stuff each chicken breast with equal parts filling.
    5. Spray a sheet pan with non-stick cooking spray, place the chicken on the pan. Bake chicken for 25 minutes or until it is fully cooked.
